Rooibos Coconut Chai Tea Popsicles

🧾 Ingredients

3 tablespoons Rooibos Coconut Chai tea

1 cup (8 fl oz) hot water for brewing the tea (200°F)

1/2 cup full-fat canned coconut milk

2 tablespoons maple syrup or honey

1/2 teaspoon vanilla extract
- Toasted shredded coconut (optional, for texture and garnish)
🫖 Step 1: Brew the Tea

Heat water to 200°F.

Steep 3 tbsp of Rooibos Coconut Chai tea in 1 cup (8 oz) hot water for 10 minutes.
- Strain and allow the tea to cool to room temperature.
🥄 Step 2: Mix the Popsicle Base

After the tea has cooled, combine all ingredients in a blender.
- Blend until smooth and well combined. Taste and adjust sweetness if needed.
🧊 Step 3: Fill the Molds

Pour the mixture evenly into 6 popsicle molds.

Sprinkle a pinch of toasted coconut into each mold, if desired.

Gently tap the molds on the counter to release any air bubbles.
- Insert popsicle sticks.
❄️ Step 4: Freeze
- Freeze for at least 5 hours, or overnight.
🍴 To Release
Run warm water over the outside of the molds for 10–15 seconds, then gently pull out the pops.
