Rooibos Coconut Chai Tea Popsicles

🧾 Ingredients

  • 3 tablespoons Rooibos Coconut Chai tea

  • 1 cup (8 fl oz) hot water for brewing the tea (200°F)

  • 1/2 cup full-fat canned coconut milk

  • 2 tablespoons maple syrup or honey

  • 1/2 teaspoon vanilla extract

  • Toasted shredded coconut (optional, for texture and garnish)

🫖 Step 1: Brew the Tea

  • Heat water to 200°F.

  • Steep 3 tbsp of Rooibos Coconut Chai tea in 1 cup (8 oz) hot water for 10 minutes.

  • Strain and allow the tea to cool to room temperature.

🥄 Step 2: Mix the Popsicle Base

  • After the tea has cooled, combine all ingredients in a blender.

  • Blend until smooth and well combined. Taste and adjust sweetness if needed.

🧊 Step 3: Fill the Molds

  • Pour the mixture evenly into 6 popsicle molds.

  • Sprinkle a pinch of toasted coconut into each mold, if desired.

  • Gently tap the molds on the counter to release any air bubbles.

  • Insert popsicle sticks.

❄️ Step 4: Freeze

  • Freeze for at least 5 hours, or overnight.

🍴 To Release

Run warm water over the outside of the molds for 10–15 seconds, then gently pull out the pops.


✨ Optional Twists

  • Blend in a few soaked cashews for a creamier, nutty flavor.

  • Add thin slices of banana or mango to the molds before freezing for a tropical surprise.

  • Dust with extra toasted coconut before serving for a decorative finish.
