Chai Tea Pumpkin Bread
A cozy fall classic with a Yum Cha twist—this pumpkin bread gets its warm, spiced flavor from our Uber Spice Chai Tea, added right into the batter.
Perfect with a cup of tea on a crisp autumn day.
Ingredients

1 cup strong Yum Cha Uber Spice Chai Tea (brewed & cooled — see brewing instructions below)

1 ½ cups canned pumpkin puree

2 large eggs

½ cup melted butter (or neutral oil)

1 ½ cups sugar (can swap half for brown sugar for deeper flavor)

2 cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt
-
1 ½ tsp cinnamon (optional, for extra warmth)

½ tsp nutmeg (optional)

½ cup chopped nuts (walnuts or pecans, optional)
Brewing the Tea
Follow Yum Cha’s hot tea instructions:

2 tsp of Uber Spice Chai Tea per 8 oz water

Steep for 3 minutes

Use 1 ¼ cups boiling water and 2 ½ tsp tea to yield 1 cup strong brewed tea (strain before using).
Instructions

Preheat oven to 350°F (175°C). Grease a 9x5 loaf pan or line with parchment.

In a large bowl, whisk together the pumpkin puree, eggs, melted butter, sugar, and brewed Uber Spice Chai Tea until smooth.

In another bowl, combine the flour, baking soda, baking powder, salt, and spices.

Gently fold the dry ingredients into the wet mixture until just until combined.

Stir in nuts if using.

Pour batter into the loaf pan and smooth the top.

Bake for 55–65 minutes, or until a toothpick comes out clean from the center.

Cool in the pan for 10 minutes, then transfer to a wire rack.
